Sourcing & Ingredients
Ethical and Sustainable Sourcing

Certified Organic
We source Organic ingredients whenever possible. In 2016, Fran’s partnered with Oregon Tilth and the USDA to achieve Organic certification.
Organic certification allows Fran’s to actively participate in efforts to make our food and agriculture more sustainable, biologically sound, and socially equitable. Today, 91% of our ingredients, by volume, are certified Organic.

Certified Fairtrade
Fran’s seeks out producers and suppliers who share our high ethical, social, and environmental standards. In 2016, we formalized this commitment by partnering with Fairtrade America and FLOCERT to achieve Fairtrade certification.
Today, 100% of our cane sugar, Dutch cocoa powder, and Madagascar vanilla bean is certified Fairtrade. 87% of our chocolate usage, by volume, is certified Fairtrade.

Our Fairtrade Impact
Over our decade of partnership with Fairtrade America and FLOCERT. Fran’s purchases of Fairtrade certified chocolate, cane sugar, and Dutch cocoa powder have generated more than $31,900 in Fairtrade funds for cocoa-growing communities. These funds are paid in addition to the Fairtrade price premiums farmers receive for their crops. It’s an extra sum Fairtrade member farms invest democratically, in projects such as education, healthcare, clean water systems, and farm improvements.

Hand-Selected Ingredients
Each ingredient is essential to the quality of our confections, allowing us to transform the ordinary into the truly extraordinary.
Hand-selecting our ingredients is the crucial first step to achieving the extraordinary, and we begin by building lasting and transparent relationships with our growers, producers, and suppliers. We use only premium chocolate made from superior grade cocoa beans for our confections. Many of our products are certified Organic and Fairtrade, and we source local ingredients whenever possible.
Chocolate
We are proud to source exceptional chocolate from Valrhona. Valrhona has been crafting fine chocolate sinzce 1922, meticulously selecting cocoa beans and managing the entire manufacturing process. 100% of Valrhona's cocoa beans can be traced back to their producers.
Fran's cocoa origins include Peru, the Dominican Republic, and Madagascar.
Organic and Fairtrade Cane Sugar
100% of Fran's cane sugar is certified Organic and Fairtrade.
Organic Cream
100% of our cream is certified Organic. As a family business, Fran’s is thrilled to partner with Smith Brother’s, a fourth-generation milk processor in the Pacific Northwest. Smith Brothers sources from certified Organic family dairy farms throughout Washington and Oregon, and 98% of Fran’s Organic cream comes from Washington farms. This fresh, Organic cream offers a subtle flavor that adds richness and depth to our confections.
Organic Butter
Crafted with Organic, grass-fed California cream, European-style butter is cultured for 16 hours and slow churned to create a silky texture and nutty flavor.
Organic and Fairtrade Madagascar Vanilla Beans
Our Madagascar vanilla beans are grown with traditional, forest-friendly practices known as agroforestry in direct partnership with Madagascar’s small holder farmers and community members in the Toamasina region. The creamy, velvety flavor of our Organic and Fairtrade Madagascar vanilla beans perfectly complements the taste of rich, premium chocolate.
Organic and Fairtrade Dutch Cocoa Powder
Italian Dutch cocoa powder provides bold and vibrant cacao notes to our Dark Chocolate Sauce.
Gray Salt
Harvested off the coast of Brittany, France, sel gris (gray sea salt) is high in mineral content and has a natural, pearlescent shimmer. The distinct flavor uniquely complements our dark chocolate caramels and thins.
Smoked Salt
Smoked over oak, Welsh sea salt develops a reduced salinity that pairs beautifully with our milk chocolate caramels and thins.
Oolong Tea
Grown high in the mountains of Taiwan and blended by Tealeaves in Vancouver, BC, this tea lends its delicate floral flavor to our Oolong Tea Truffle.
Coffee
Locally roasted by Olympia Coffee in Olympia, WA, our coffee beans are blended for flavors of sweet chocolate, dense fruit, and a long clean finish.
Single Malt Whiskey
With deep flavor and a remarkably smooth finish, McCarthy's Oregon Single Malt Whiskey from Clear Creek Distillery in Portland, OR is an excellent complement to our dark chocolate.
Peppermint
Locally grown peppermint from Washington's Yakima Valley is infused into our dark chocolate for a delicate balance of flavors.
Allergens and Dietary Preferences
We are happy to provide you with as much information as you and your doctor may need to make an informed decision. We do not want to deprive anyone of our confections unnecessarily. Please call us for a complete ingredient list and answers to any questions you may have regarding allergens.

Please consult our ingredient lists to determine if a confection contains any of these allergens.
